A to-do app can hold the list. It cannot tell you what is due today.
Race week is not a to-do list, it is a schedule counting down to a fixed time on a fixed day. The difference sounds small and it is the whole thing: a to-do app shows you everything at once and lets you decide, and deciding is the one job a first-timer in race week does not want, because it is the week they are least able to judge what is urgent.

Why the empty list is the problem
Every general checklist app is excellent once you know what belongs in it. In race week, that is the thing a first-timer does not know, and it is why the honest failure mode is not a missed task but a list that was never written in the first place.
The value of a race-week list is almost entirely in the items you would not have thought of. That is not something a blank app can give you.
Have I done enough
The most repeated thing we heard in over a hundred conversations with first-time triathletes was not a missing feature. It was a question, asked the day before: have I done enough.
A list of what is left cannot answer that. A view of what is already done can, which is why race week in Taperly shows both.
